I love Mexican food, especially when it's homemade. The other night I made one of my favorites, chicken and cheese enchiladas with guacamole. You should start by making the enchiladas first, you can cook up chicken just for this or use left over roasted or fried chicken. You could make the guacamole while the enchiladas are baking. 
One way to pick out a good avocado is to very lightly squeeze it. If it gives a little, it's ripe enough to use; no give, then it's not quite ready. A trick my dad taught me is if you want the avocado to ripen faster just put into a brown paper bag and set it on the counter or put in a cupboard. If you need it to last a bit longer just put the avocado in the frig. 
Please forgive me I had given this meal to a friend and I forgot to take a picture of the enchiladas plated. I was enjoying her newborn baby girl while she was enjoying my enchiladas. We were both winners that evening! Winking smile
 Chicken & Cheese Layered Enchiladas
2-3 cups cooked chicken (diced or shredded)
1-2 cups shredded cheese (cheddar, coby, jack)
2 small or 1 lrg can enchilada sauce
3 burrito sized flour tortillas
Layer the ingredients in a 9x13 baking dish. Start with coating the bottom with the sauce. Then lay a tortilla (torn/cut to size) on the sauce and coat with more sauce. Add chicken and cheese. Pour more sauce then repeat the steps to make one more layer. Top with more sauce and cheese. Cover and bake in a preheated oven @ 350 degrees until it bubbles and the cheese is melted, about 20-30 minutes. Serve with refried beans, guacamole, sour cream and top with lettuce. 

2-3  med avocados
2 medium tomatoes
1/2  med yellow onion
1 1/2 TBS minced garlic
Handful fresh cilantro
        or 1-2 TBS cilantro in a tube (see picture)
Juice of one lime or 1/2 of one lemon
Salt & Pepper to taste

Save the avocados for the last step. Dice into small pieces the tomatoes and onions. If using the fresh cilantro, chop it up. Add all ingredients into a bowl. Cut the avocado in half and slice, dice and add to the rest. Stir it all together and enjoy! Remember to keep left over's covered and refrigerated, although you may not have any, we rarely ever do.
